A classic Italian dish. Breaded eggplant slices layered with mozzarella and Parmesan cheese, and our delicious marinara sauce. Serve over the tender noodles provided. Oven - 40 minutes if thawed, 55 minutes if frozen.


Preparation:  Thaw completely. If frozen or partially frozen, add 10-15 minutes cooking time.


Cooking Instructions:  Preheat oven to 350F. Remove lid. Place pan on baking sheet and bake uncovered 40 minutes (30 minutes for regular entrée) or until internal temperature is 160F on instant read thermometer. Noodles: Bring 8 cups water to a boil. Boil noodles 8-10 minutes or until tender; drain. If not using cooked noodles immediately, toss with 1 tablespoon olive oil to prevent sticking. Serve eggplant over noodles.
