Savory sweet potatoes, tangy black beans and corn make this a colorful and delicious entrée that provides great nutrition and antioxidant. Great way to sneak in the vegetables. Oven: 50 minutes if thawed, 65-70 minutes if frozen.


Preparation:  Thaw completely. If frozen or partially frozen, add 15-20 minutes covered baking time before proceeding with uncovered baking time.


Cooking Instructions:  Preheat oven to 3500F. Place pan on baking sheet. Bake covered for 45 minutes (30 minutes for regular entrée) or until sauce is bubbly. Remove lid and bake uncovered 10 more minutes or until cheese is melted. Cooking times may vary due to differences in ovens.


Suggested Sides:  Avocado slices, Sour cream, Spanish Rice, or fresh fruit.
