This juicy and tender chicken recipe is loaded with bright Southwestern flavors.  The mango salsa is a perfect match - refreshing and colorful; made with ripe mangos, diced bell peppers, green onions, cilantro, and jalapeños.  Grill or stovetop - 12-15 minutes if thawed, 15-20 minutes if frozen.

 

Preparation:  Thaw completely.  If frozen or partially frozen, defrost slightly in microwave.  

Cooking Instructions:  Grill:  Preheat grill to medium heat.  Remove chicken from bag and reserve marinade.  Place chicken on grill and cook 6-7 minutes on each side, basting with reserve marinade, or until done (165F on instant read thermometer).  Stovetop:  Spray skillet with non-stick coating and heat over medium high heat.  Add chicken, reserving marinade, and cook 6-7 minutes on each side, basting with reserve marinade, or until done (165F on instant read thermometer).  Salsa: Swirl content of the bag a few times to mix well.  Serve salsa with chicken or over salad greens.  

 

Suggested Sides: Mexican Rice or tossed salad with sliced cucumbers
