The exotic flavors of cinnamon, coriander, ginger, garlic and paprika blend with plump chicken breasts, chickpeas, white beans, tomatoes, and white wine to make this zesty Mediterranean dish.  Add cayenne and red pepper if you like, or leave it mild.  Either way, this will be a delicious and hearty meal.  


Preparation:  Thaw completely.  If frozen or partially frozen, defrost in microwave before cooking.  Do not over-microwave, or chicken will become tough.




Cooking Instructions:  Coat a saute pan with nonstick cooking spray.  Remove chicken from bag, and discard marinade.  Place chicken in pan and cook over medium-high heat for about 8 minutes on one side, then turn and cook for another 4 minutes or until chicken is done (165F on instant read thermometer).  Remove chicken from pan, and set aside.  Pour off any juices or fat.  Add contents of sauce bag to skillet, and heat over medium-high heat until hot.  Add chicken back into sauce until just heated through.


Suggested Sides:  Rice and sliced oranges
