Honey Dijon Pork Tenderloin with Sweet Potato Fries – This lean pork tenderloin is rubbed with a blend of Dijon mustard and spices, then roasted to perfection.  Oven baked fries out of sweet potatoes brings out their inherent sweetness.  Enjoy the wholesomeness!  Oven:  35-40 minutes if thawed.

 

Preparation:  Thaw completely.  If frozen or partially frozen defrost in microwave.

 

Cooking Instructions:  Preheat oven to 400ºF. Remove pork from bag, reserving marinade. Place the pork in a baking dish. Distribute the sweet potato fries around the pork. Tent pork with piece of foil. Bake for 10-15 minutes. Remove foil. Baste pork with reserved marinade. Roast uncovered for 20-25 minutes (30-35 minutes for full entrée) or until internal temperature of pork is 160F on an instant read thermometer.  Cooking times may vary due to differences in ovens.  Let rest for 5-10 minutes before slicing.
