This beautiful frittata is gluten free and flavorful for health conscious eaters.  It's perfect for a cozy supper or easy brunch. Layers of hash browned potatoes, artichokes, green onions, spinach, sun-dried tomatoes, Monterey Jack and Cheddar cheeses are enriched with eggs and sour cream. Delicious and fulfilling!  Oven - 80 minutes thawed.

 

Preparation:  Thaw completely.  If frozen or partially frozen, add 15 - 20 minutes baking time.  When thawed, be careful not to spill egg mixture.

 

Cooking Instructions:  Preheat oven to 350F.  Remove lid. Place pan on baking sheet and bake uncovered 60-70 minutes or until center is set and internal temperature is 165 degrees. Tent with foil if cheese is too brown before center is set.  Let stand 5 minutes before cutting into squares.
