Invite instant sunshine into your home with this lively entree. Plump chicken breasts are layered atop brown rice, and everything is smothered with a colorful Caribbean sauce flavored with pineapple, coconut milk and red bell peppers (all gluten free ingredients). Adventurous diners can add zesty jalapeno peppers to the mix. Oven:  25 minutes if thawed, 35 minutes if frozen.

 

Preparation: Thaw completely.  If frozen or partially frozen add 10 minutes cooking time.  

 

Cooking Instructions:  Preheat oven to 350F.  Place pan on baking sheet and bake uncovered 30-35 minutes or until chicken measures 165F on an instant read thermometer and rice is tender. Baking times may vary due to differences in ovens.
