Boneless chicken breasts are marinated in coconut milk, soy sauce, fresh lemon juice, a touch of ginger and other Asian flavors.  Grill them outside or in a skillet on the stovetop, and serve with our irresistible peanut sauce – which we’ve been told could be habit-forming.  Grill or Stovetop – 10 minutes if thawed, 15 minutes if frozen.

 

Preparation:  Thaw completely.  If frozen or partially frozen, defrost slightly in microwave before cooking.

 

Cooking Instructions:  Remove chicken from bag; discard bag and marinade. Grill:Preheat grill to medium heat. Cook chicken 8-10 minutes, turning halfway through, until chicken is completely done (165F on instant read thermometer). Stovetop: Heat large skillet over medium heat. Add 1 tablespoon vegetable oil or spray skillet with non-stick coating.  Add chicken, being careful not to overcrowd skillet.  Cook on each side 5-6 minutes or until internal temperature of chicken is 165F on instant read thermometer.  Sauce:  Sauce can be served cold or hot.  To serve hot, heat sauce in saucepan over low heat, stirring often.

 

Suggested Sides:  noodles or rice, fresh slaw or steamed broccoli
