Plump shrimp are joined by color bell peppers, purple onions and a hint of fresh ginger. Pineapple chunks not only give this wonderful shrimp stir-fry color, but a tropical flavor. Cilantro and a little red pepper flakes give this entrée a zesty finish. 10 minutes to cook.

 

Preparation: Thaw completely. If frozen or partially frozen, defrost slightly in microwave before cooking, being careful not to cook shrimp.

 

Cooking Instructions: Preheat non-stick skillet or wok to medium-high. Add 1 tablespoon cooking oil. Add shrimp to wok, discarding any liquid in bag. Stir-fry 2-3 minutes. Remove shrimp from wok before it's fully cooked and set aside on a plate. Add bag of vegetables to wok. Cook 2-3 minutes. Add sauce to vegetables and bring sauce to a boil. Add shrimp back to wok. Cook an additional 2-3 minutes or until shrimp is pink. Serve warm with rice, if desired.

 

Suggested Side: Premium Jasmine or Brown Rice
