Mojo Pork Tenderloin is marinated in a delicious blend of citrus juices, garlic, oregano, cumin, and fresh herbs. The result is an incredibly juicy, flavorful dish. Come with a beautiful and healthy blend of brown rice, corn, black beans and vegetables. Oven: 35-40 minutes if thawed.

 

Preparation:  Thaw pork tenderloin completely.  If frozen or partially frozen defrost in microwave.

 

Cooking Instructions:  Oven: Preheat oven to 400ºF. Remove pork from bag. Place pork and orange slices in a baking pan, reserving marinade. Roast in oven for 35-38 minutes or until internal temperature of pork is 150F on an instant read thermometer. Baste with marinade in bag a couple of times during cooking. Transfer pork to a cutting board and tent with foil. Let rest for 5 minutes before carving. Grill: Preheat grill to medium heat. Grill pork 12-15 minutes, turning to brown on both sides, until internal temperature is 150F on instant read thermometer. Baste with marinade in bag a couple of times during cooking. Rice: Place rice mixture in a microwavable dish. Add 1 tablespoon water. Cook 2 minutes, stirring once halfway or until heated through. Serve warm with sliced pork.  

 

Suggested Sides:  Fresh salad or sliced cucumbers and tomatoes
