Quinoa loaded with protein, fiber and minerals is mixed with black beans, peppers, corn kernels, fragrant garlic and onions then topped with the gooey Mexican cheese. Watch out for the southwestern flavor explosion. Oven – 30 - 40 minutes if thawed, 50 – 60 minutes if frozen.
Preparation: Thaw completely. If frozen or partially frozen, add 15-20 minutes covered baking time before proceeding with uncovered baking time.
Cooking Instructions: Preheat oven to 375F. Place pan on baking sheet. Replace lid with foil, bake covered for 25 minutes (35 minutes for full entrée) or until hot in the middle. Remove foil and bake uncovered 10 more minutes or until cheese is melted. Cooking times may vary due to differences in ovens.
