Mediterranean Chicken Pasta Salad – Consider serving this substantial salad outdoors, during an impromptu picnic or just out on the back porch. Juicy chicken, capers, olives, tomatoes, artichoke hearts, shredded cheese make this a flavorful dish. Stovetop – 10-15 minutes if thawed, 15-20 minutes if frozen.
Preparation: Thaw completely. If chicken and sauce mixture is frozen or partially frozen, defrost slightly in microwave. Do not over-microwave, or chicken will become tough.
Cooking Instructions: In large saucepan, bring 8 cups water and 1 teaspoon salt, if desired, to a boil. Add pasta and boil 8-10 minutes or until tender but not overdone. Drain pasta and run under cold water to stop the cooking process. Place pasta in large serving bowl and add the cold tomato sauce with chicken. Toss to mix. If desired, serve salad on a bed of fresh baby spinach.
