Who needs an island getaway when you can bring the tropics to your kitchen? Plump chicken breasts marinate in citrus and spices and are topped with a fabulous peach and pineapple sauce. Grill or stovetop: 20 minutes if thawed, 25 minutes if frozen.
Preparation: Thaw completely. If frozen or partially frozen, defrost in microwave before cooking. Do not over-microwave, or chicken will become tough.
Cooking Instructions: Grill: Preheat grill to medium heat. Remove chicken from bag, and DISCARD MARINADE. Grill 15-20 minutes or until internal temperature of chicken is 165F on instant read thermometer, turning often. Stovetop: Heat large skillet over medium-high heat. Add 2 tablespoons cooking oil, or spray skillet with non-stick coating. Add contents of chicken bag. Cover and simmer 20 minutes or until internal temperature of chicken is 165F on instant read thermometer. Sauce: Serve peachy pineapple sauce chilled or heated. To heat, place in saucepan over medium heat and bring just to a simmer, stirring to keep from sticking.
