Chicken Satay with Peanut Sauce

Description:

Boneless chicken breasts are marinated in coconut milk, soy sauce, fresh lemon juice, a touch of ginger and other Asian flavors.  Grill them outside or in a skillet on the stovetop, and serve with our irresistible peanut sauce – which we’ve been told could be habit-forming.  Grill or Stovetop – 10 minutes if thawed, 15 minutes if frozen.

Cooking Instructions

Preparation:  Thaw completely.  If frozen or partially frozen, defrost slightly in microwave before cooking.

 

Cooking Instructions:  Remove chicken from bag; discard bag and marinade. Grill: Preheat grill to medium heat. Cook chicken 8-10 minutes, turning halfway through, until chicken is completely done (165F on instant read thermometer). Stovetop: Heat large skillet over medium heat. Add 1 tablespoon vegetable oil or spray skillet with non-stick coating.  Add chicken, being careful not to overcrowd skillet.  Cook on each side 5-6 minutes or until internal temperature of chicken is 165F on instant read thermometer.  Sauce can be served cold or hot.  To serve hot, heat sauce in saucepan over low heat, stirring often.
