Flame-Cooked Chicken Saltimbocca

Description:

“Saltimbocca” is Italian for “jump in the mouth,” and this version of the classic Italian dish certainly lives up to its name. Marinated chicken breasts are topped with bacon and Parmesan cheese, delivering a lively, tantalizing entrée.  Grill or Stovetop – 10-15 minutes if thawed, 15-20 minutes if frozen.

Preparation:  Thaw completely.  If frozen or partially frozen, defrost slightly in microwave.

 

Cooking Instructions:  Preheat grill or large skillet to medium-high heat.  Cook chicken breasts 5-8 minutes on one side until browned.  Turn chicken breasts to other side; crisscross two strips of bacon on top of each breast, then sprinkle each breast with 1 tablespoon Parmesan cheese. Cover and continue cooking 5 minutes or until chicken is browned, cheese is melted, and internal temperature of chicken is 165F on instant read thermometer.
