Description:Chicken breasts are coated with a tangy Dijon and then dipped in chopped pecans. Simply pop them in the oven, then top with shredded mozzarella cheese and a tasty basil pesto. Oven – 25 minutes if thawed, 30 minutes if frozen.
Preparation: Thaw completely. If chicken is frozen or partially frozen, defrost in microwave before cooking. Do not over-microwave, or chicken will become tough.
Cooking Instructions: Preheat oven to 350F. Spray baking sheet with non-stick coating. Remove chicken from bag and discard bag. Place chicken on baking sheet and top chicken breasts evenly with pecan topping. Bake 20-25 minutes or until chicken is done (165F on instant read thermometer). Top chicken evenly with mozzarella cheese and return to oven for 1-2 minutes to melt cheese. Top each chicken breast with 1 tablespoon of room-temperature basil pesto, and serve.
